How do we know that God is outside of the universe? Becasue we reason from effect to cause. From the data, space, time and matter had a beginning. So then whatever caused space, time and matter had to transcend them.
Whatever created space, time and matter couldn't be made of space, time and matter becasue there wasn't any space, time and matter.
The only way to know God in a robust way is if He reveals Himself. I could make some educated guesses about a person but to really know a person they would need to reveal themself to me. For example we could know some things about God, like He is spaceless, timeless and immaterial but we couldn't know if He is coming to save us unless He tells us.
Why can't there be plural gods? Logically, there should only be one infinite being. An infinite being lacks nothing. For two beings to differ, one must lack something the other being has. But a being that lacks something is not infinite. Therefore there can only be one infinite being.
An infinite God would have no potential like we do. He is maxed out in everything. And there can only be one being that has everything.
